01 - Place the jasmine rice in a fine mesh strainer and rinse under cold running water until the runoff turns completely clear. Shake off excess water and set aside.
02 - In a medium saucepan, add the rinsed rice, coconut milk, water, and salt. Stir gently to distribute the ingredients evenly.
03 - Set the saucepan over medium-high heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
04 - Once boiling, reduce the heat to low and immediately cover with a tight-fitting lid. Simmer for 15 minutes without lifting the lid.
05 - Remove the saucepan from heat and let it sit covered for 10 minutes, allowing the rice to finish steaming and absorb remaining liquid.
06 - Remove the lid and fluff the rice gently with a fork. Transfer to a serving bowl and garnish with toasted coconut flakes, chopped cilantro, and lime zest if desired. Serve warm.
