12 - 1 tbsp rice vinegar
13 - 1 tbsp honey or brown sugar
14 - 2 tbsp water
15 - 1 tsp cornstarch

→ For Cooking

16 - 2 tbsp vegetable oil, divided

# Steps:

01 - Combine sliced beef with 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp sesame oil in a bowl. Toss to coat and let sit for 10 minutes.
02 - Mix soy sauce, oyster sauce, rice vinegar, honey, water, and cornstarch in a small bowl until smooth. Set aside.
03 - Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Stir-fry marinated beef for 2 to 3 minutes until just browned. Remove and set aside.
04 - Add remaining 1 tbsp oil to the wok, then stir-fry garlic, ginger, and spring onions for about 30 seconds until fragrant.
05 - Add carrots and stir-fry for 2 minutes. Add snow peas and continue stir-frying for an additional 2 minutes until crisp-tender.
06 - Return beef to the wok, pour in the prepared sauce, and toss everything together for 1 to 2 minutes until sauce thickens and coats ingredients evenly.
07 - Serve hot, optionally garnished with extra spring onions. Ideal alongside steamed rice or noodles.

# Expert Tips:

01 -
  • It's ready in under 30 minutes but tastes like you spent hours on it.
  • The vegetables stay crisp and bright, so you actually taste each one instead of mushy sadness.
  • Beef cooks so quickly that it stays tender, and the sauce clings to everything perfectly.
02 -
  • Don't crowd the pan when searing beef—if you pile it all in at once, it steams instead of browning, and you lose that crucial flavor layer.
  • The vegetables cook so fast that the moment you stop stirring is when they go from perfect to overcooked, so stay close and keep moving them.
03 -
  • Slice your beef slightly frozen—it's easier to get even, thin slices that cook quickly and stay tender.
  • Toast your sesame oil by adding it to the hot beef marinade; it intensifies the flavor in a way that transforms the whole dish.
