02 - 2 tbsp cornstarch
03 - 1 tbsp soy sauce

→ Vegetables

04 - 1 red bell pepper, julienned
05 - 1 yellow bell pepper, julienned
06 - 1 medium onion, sliced
07 - 1 cup snow peas, trimmed
08 - 2 cloves garlic, minced
09 - 1 tbsp fresh ginger, minced

→ Sauce

10 - 3 tbsp soy sauce
11 - 2 tbsp oyster sauce
12 - 1 tbsp rice vinegar
13 - 1 tbsp chili garlic sauce
14 - 1 tsp sesame oil
15 - 1 tsp brown sugar

→ Garnish

16 - 2 spring onions, sliced
17 - 1 tbsp toasted sesame seeds

# Steps:

01 - Toss the beef strips with cornstarch and 1 tbsp soy sauce in a bowl. Set aside for 10 minutes to marinate.
02 - Whisk together soy sauce, oyster sauce, rice vinegar, chili garlic sauce, sesame oil, and brown sugar in a small bowl until well combined.
03 - Heat 1 tbsp neutral oil in a large wok or skillet over high heat. Add beef and stir fry for 2–3 minutes until browned but not fully cooked. Remove and set aside.
04 - Add another 1 tbsp oil to the wok. Stir fry the onion, garlic, and ginger for 1 minute until fragrant.
05 - Add bell peppers and snow peas. Stir fry for 2–3 minutes until vegetables are just tender but still crisp.
06 - Return the beef to the wok. Pour in the sauce and toss everything together. Stir fry for 2–3 minutes until beef is cooked through and sauce has slightly thickened.
07 - Garnish with sliced spring onions and toasted sesame seeds before serving over steamed jasmine rice or noodles.

# Expert Tips:

01 -
  • It comes together in less than thirty minutes which is a lifesaver on busy nights.
  • The sauce hits every single flavor note from spicy to sweet and salty.
02 -
  • Do not overcrowd the pan or the beef will steam instead of getting that nice sear.
  • Have everything chopped and measured before you turn the stove on because stir fry happens fast.
03 -
  • Toast your sesame seeds in a dry pan for a minute to really bring out their nutty flavor.
  • If the sauce is too thick, splash in a teaspoon of water to loosen it up.
