06 - 1 medium tomato, diced (optional)
07 - 2 tbsp fresh chives or parsley, chopped (optional)

04 - When tater tots are ready, sprinkle evenly with shredded cheddar cheese and cooked beef bacon. Return to the oven for 3–5 minutes until the cheese is melted and bubbly.
05 - Remove from oven and transfer to a serving platter. Top with spring onions, dollops of sour cream, diced tomato, and fresh herbs if using. Season with black pepper. Serve immediately while hot.

# Expert Tips:

01 -
  • The contrast between hot crispy tots and cool tangy sour cream hits every craving at once
  • Everything comes together in under an hour with mostly hands off oven time
  • People literally cheer when these hit the table at parties
02 -
  • Do not skip the flip halfway through baking or you will end up with soggy bottoms on half your tots
  • Let the beef bacon drain well or the excess oil will make your tots greasy instead of crispy
03 -
  • Try mixing some shredded pepper jack into the cheddar for a spicy kick that sneaks up on you
  • Spring onions lose their crunch fast so slice them right before serving
