Keto Dirt Cake (Printable)

Layers of chocolate pudding, whipped cream, and crunchy almond crumble create this nostalgic low-carb dessert.

# Ingredient List:

→ Chocolate "Dirt" Crumble

01 - 1 ¼ cups almond flour
02 - ¼ cup unsweetened cocoa powder
03 - ⅓ cup powdered erythritol or monk fruit sweetener
04 - ¼ cup melted unsalted butter
05 - Pinch of salt

→ Chocolate Pudding Layer

06 - 1 ½ cups unsweetened almond milk
07 - ¼ cup heavy cream
08 - ¼ cup unsweetened cocoa powder
09 - ½ cup powdered erythritol or monk fruit sweetener
10 - ⅛ tsp xanthan gum
11 - ¼ tsp instant espresso powder
12 - ½ tsp pure vanilla extract

→ Whipped Cream Layer

13 - 1 cup heavy whipping cream
14 - 2 tbsp powdered erythritol or sweetener of choice
15 - ½ tsp vanilla extract

# Steps:

01 - Preheat oven to 325°F. In a bowl, combine almond flour, cocoa powder, sweetener, melted butter, and salt. Stir until crumbly. Spread onto a parchment-lined baking sheet and bake for 8–10 minutes, stirring halfway. Let cool completely, then break into fine crumbs.
02 - In a saucepan, whisk together almond milk, heavy cream, cocoa powder, sweetener, xanthan gum, and espresso powder if using. Place over medium heat and stir constantly until mixture thickens, about 3–4 minutes. Remove from heat and stir in vanilla. Let cool to room temperature, then refrigerate until chilled and thickened for at least 1 hour.
03 - Using an electric mixer, whip heavy cream, sweetener, and vanilla until stiff peaks form.
04 - In a glass dish or individual jars, layer half the chocolate crumble at the base. Spread half the pudding over the crumbs, then half the whipped cream. Repeat layers, finishing with the remaining crumble on top. Chill for at least 1 hour before serving.

# Expert Tips:

01 -
  • The almond dirt topping has this insane buttery cocoa flavor that actually tastes like the chocolate graham cracker crusts you miss
  • You get that nostalgic dirt cake experience from childhood potlucks while staying deep in ketosis without feeling deprived at all
02 -
  • The pudding really does need that full hour in the fridge to set up properly or you will end up with chocolate soup instead of distinct layers
  • Xanthan gum is not optional here because without it the pudding layer will never thicken enough to layer properly
03 -
  • That espresso powder is the secret restaurant quality trick that makes people ask what makes this chocolate so intense
  • Use a clear glass dish because the visual drama of those muddy layers is half the fun of serving this dessert
