- Combine strawberries and lemon juice in a blender or food processor. Blend until completely smooth, ensuring no fruit chunks remain.
- Transfer the puree to a small saucepan. Add honey or maple syrup and stir thoroughly until well incorporated.
- Sprinkle gelatin powder over cold water in a separate small bowl. Let stand for 3–5 minutes until the mixture thickens and absorbs the liquid.
- Gently heat the strawberry mixture over medium-low heat for 2–3 minutes until warm throughout. Avoid boiling to preserve gelatin's effectiveness.
- Add the bloomed gelatin to the warm strawberry mixture. Whisk constantly for approximately 2 minutes until fully dissolved and the liquid is smooth without any granules.
- Remove from heat and carefully pour the mixture into silicone gummy molds or a parchment-lined small baking dish. Work quickly before the gelatin begins to set.
- Refrigerate for at least 2 hours or until completely firm. The gummies should hold their shape when touched.
- Remove gummies from silicone molds or cut into bite-size pieces if using a baking dish. Store in an airtight container in the refrigerator for up to 1 week.
