01 - In a mixing bowl, combine the softened cream cheese and Greek yogurt (or sour cream). Stir with a spatula until the mixture is smooth and free of lumps.
02 - Add the finely diced red bell pepper, cucumber, carrots, green onions, and celery to the cream base. Fold in the chopped parsley and dill. Mix thoroughly until all vegetables are evenly distributed.
03 - Sprinkle in the garlic powder, salt, black pepper, and lemon juice if using. Stir until all seasonings are fully incorporated throughout the mixture.
04 - Taste the spread and adjust salt and pepper levels as needed to suit your preference.
05 - Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
06 - Transfer to a serving dish and serve chilled with crackers, fresh bread, pita pockets, or crudités. Also works well as a sandwich spread.

# Expert Tips:

01 -
  • It transforms whatever vegetables are overflowing in your fridge into something genuinely craveable.
  • The cream cheese base makes it rich enough to feel indulgent while keeping things light and fresh.
02 -
  • If you skip the chilling step the spread will taste bland because the vegetables need time to release their juices into the cream cheese.
  • Excess moisture from cucumbers can make the spread watery after a day in the fridge so pat them dry with a paper towel before dicing.
03 -
  • Let the cream cheese sit on the counter for a full hour before mixing because patience here saves you from a lumpy spread.
  • Dice every vegetable as small and uniform as possible because the texture difference between a rough chop and a fine dice is the difference between rustic and refined.
