01 - 2 cups dried red kidney beans or 3 cans drained and rinsed

# Steps:

01 - Rinse dried beans and soak overnight. Drain and rinse thoroughly before cooking.
02 - Heat oil in a large Dutch oven over medium heat. Add sausage slices and cook 3-4 minutes until browned. Remove and set aside.
03 - In the same pot, cook onion, bell pepper, and celery 6-8 minutes until softened. Add garlic and cook 1 minute more.
04 - Return sausage to pot. Add beans, turkey leg if using, liquid, bay leaves, thyme, paprika, cayenne, black pepper, salt, and oregano. Stir well.
05 - Bring to boil, reduce heat, cover, and simmer 1-1.5 hours (45 minutes for canned beans), stirring occasionally, until beans are very tender and liquid is creamy.
06 - Combine rice, water, and salt in saucepan. Bring to boil, reduce heat to low, cover, and cook 15-18 minutes until water is absorbed. Fluff with fork.
07 - Discard bay leaves and turkey leg. Shred turkey meat if desired and return to pot. Adjust seasoning. Serve over rice with parsley, green onions, and hot sauce.
