Beef Burritos with Rice and Beans (Printable)

01 - 1 lb lean ground beef
02 - 1 small onion, finely chopped
03 - 2 cloves garlic, minced

13 - 1 cup long-grain white rice
14 - 2 cups water
15 - ½ tsp salt
16 - 1 tbsp lime juice
17 - 2 tbsp chopped fresh cilantro

→ Beans

18 - 1 can (15 oz) black beans, drained and rinsed
19 - ½ tsp ground cumin
20 - ¼ tsp chili powder
21 - Salt and pepper to taste

→ Assembly

22 - 4 large flour tortillas (10-inch)
23 - 1 cup shredded cheddar or Monterey Jack cheese
24 - 1 cup salsa
25 - ½ cup sour cream
26 - 1 cup shredded lettuce

# Steps:

01 - Rinse rice under cold water. Combine rice, water, and salt in a saucepan. Bring to boil, reduce heat to low, cover, and simmer 15 minutes. Remove from heat and let stand 5 minutes. Fluff with fork and stir in lime juice and cilantro.
02 - Heat olive oil in large skillet over medium heat. Add onion and cook 3 minutes until softened. Add garlic and cook 30 seconds. Add ground beef, breaking up with spoon, and brown. Drain excess fat. Stir in tomato paste, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Cook 1 minute. Add beef broth and simmer 5 minutes until thickened.
03 - Combine black beans, cumin, chili powder, salt, and pepper in small saucepan over medium heat. Cook 5 minutes, stirring occasionally.
04 - Heat tortillas in dry skillet or microwave until pliable.
05 - Place tortilla on flat surface. Spoon rice, beef mixture, and beans down center. Top with cheese, salsa, lettuce, tomato, and sour cream. Fold in sides and roll tightly. Repeat with remaining tortillas.
06 - Serve burritos warm with extra salsa and sour cream if desired.
